For this simple, delicious, and healthy roast, the following ingredients are suggested:
Onion (red or yellow)
Red potatoes (sliced small with the skin on)
Chop your veggies of choice (suggestions above), and place them on a deep-dish cookie sheet. Sprinkle with Celtic Sea Salt and pepper to taste. Using a brush, lightly dust veggies with olive oil. Add some fresh herbs, like rosemary and thyme, if you wish.
Roast at 400F for 20 minutes. Stir occasionally with a spatula to prevent veggies from getting stuck to the pan.
This recipe can be served as a side or a meal or can be mixed in with pasta.
- Potatoes can take more than 20 minutes to roast, so put them in the oven first and then chop the rest of the veggies.
- For cauliflower, get olive oil on the floret and place it face down on the pan for best results.
