For this simple, delicious, and healthy roast, the following ingredients are suggested:

Cauliflower
Broccoli
Onion (red or yellow)
Mushroom
Zucchini
Butternut squash
Bell peppers
Asparagus
Red potatoes (sliced small with the skin on)
Carrots
Rosemary (optional)
Thyme (optional)

Chop your veggies of choice (suggestions above), and place them on a deep-dish cookie sheet. Sprinkle with Celtic Sea Salt and pepper to taste. Using a brush, lightly dust veggies with olive oil. Add some fresh herbs, like rosemary and thyme, if you wish.

Roast at 400F for 20 minutes. Stir occasionally with a spatula to prevent veggies from getting stuck to the pan.

This recipe can be served as a side or a meal or can be mixed in with pasta.

Notes:

  • Potatoes can take more than 20 minutes to roast, so put them in the oven first and then chop the rest of the veggies.
  • For cauliflower, get olive oil on the floret and place it face down on the pan for best results.
